Sweet thoughts. Rich creamy Barley Porridge with cardamom and pomegranates
Ingredients:
2 cups of white pearled barley
4 cups of water
3 cups of whole milk
1/2 teaspoon of kosher salt
5 pods of cardamom
1 cup of sugar
1/4 cup of dried currants
Procedure:
In a Medium pot add barley and water with salt and bring up to a boil and simmer until barley is cooked and edible aproximately 5-8 minutes. Remove excess water and add milk sugar and cardamom pods. Add currants . Slowly cook and stir regularly until milk is reduced and creamy. Remove to cardamom pods.
Place in a warmer or bain marie.
2 oz. of pomegranate seeds
1 oz. of pomegranate molasses
1 oz. of sliced red pear
In a bowl serve 8 oz of porridge into a bowl and top with pomegranates and pears.
Serve with a side of pomegranate molasses.
